Artisan Bread

3 Cups Flour
1 teaspoon yeast
2 teaspoons salt
1 1/2 cups water


In a large mixing bowl, combine dry ingredients. Add water, and stir until thoroughly mixed. Cover with a tea towel or plastic wrap and let sit for 12-18 hours.

Remove dough from bowl and gently knead and shape on well floured surface. Set aside to rise until doubled in bulk (about 2 hours).

Meanwhile, after about 1 1/2 hours, place a dutch oven (cast iron or enameled cast iron) in the oven, and preheat the oven to 500 degrees.

When the oven is good and hot, take the dutch oven out and place the bread inside. Replace the lid, and bake for about 25 minutes, or until crispy on the outside.

Let cool completely before cutting.
